The inaugural 3-year-old single-malt from Cotswolds Distillery is the child of locally-grown, floor-malted and unpeated Odyssey barley, fermented for more than 90 hours and aged in first-fill Kentucky ex-Bourbon barrels and reconditioned red wine casks using traditional production processes. The result is an oaky, fruity, full-bodied whisky that punches above its weight on all parameters and belies its young age with its rich, expressive notes.
Tasting Notes: Honey and butterscotch on the nose with hints of peach, apricot and nutty marzipan.This is followed by a tannin-rich, spicy palate interwoven with caramelised marmalade notes – reminding you of a Sevillan summer. This finish is long and resinous, with dark fruits and just a hint of treacle. Overall, a warm, malty experience that belies this dram’s young age.
