Fair (Gin)

This delicately flavoured gin contains juniper berries sourced from Varganza village in Samarkand. The berries come from Dustkul Bogi cooperative, which works with 3,050 micro producers. These berries are macerated with cardamom and coriander from Samarkanda, angelica, grains of paradise, and other organic botanicals from India. The maceration happens in small batches for a week. The liquid undergoes single distillation in 200-litre batches, in a hand-made alembic copper still called the Stupfler — one of the best stills for small batch gin and reputed for retaining more flavour than any other still.


The final distilled gin is well-rounded with a refined lemon flavour that can be enjoyed in a classic G&T or in a cucumber gimlet. Garnish with a lemon peel twist.


Tasting Notes: In the glass, the gin is clear and has aromas of juniper, spice and baked lemon bars. It moves to a strong juniper flavour on the palate, with coriander, citrus notes and fragrant but mild spices. The finish is long, clean and fresh. It’s a well-rounded gin with a curiously sweet and lemony flavour.
